Plantain Quesadillas with Mole

Prepare these delicious quesadillas with Plantains and Mole. For this recipe you will use a tortilla press, since the tortillas are made with banana and corn dough. Ingredients

4 servings
  • 1 piece of plantain ripe, for the dough
  • 2 cups of flour for the masa or dough
  • 1 teaspoonful of baking powder for the masa or dough
  • 1/2 Cup of bacon for the beans, diced
  • 1/4 of Cup of onion for the beans (finely chopped)
  • 2 cups of bean of the pot, without broth
  • 1 twig of epazote for the beans
  • 1 Cup of Oaxaca cheese shredded
  • enough of oil
  • 2 cups of chicken soup
  • 1 Cup of mass in pasta
  • 1 Tablet of tablet chocolate table of the table
  • enough of sour cream to decorate
  • enough of fresh cheese to decorate
  • enough of oregano to decorate

    Preparation

    Cook the banana with the peel at medium heat. Peel and reserve.
    Place the banana, flour, baking powder in a bowl, mix until you have a dough. Reserve.
    In a pan over medium heat cook the bacon, until fried, add the onion, once transparent, add the beans, the epazote and with the help of a masher, crush the beans, cook for 5 minutes, season. Remove from heat and cool.
    Place a little of the banana dough in a tortilla press with plastic wrap. Flatten and stuffed with beans and Oaxaca cheese, then close up like a quesadilla.
    Heat oil over medium heat and fry the quesadillas. Place on absorbent paper to remove excess fat and reserve.
    For the mole, heat the chicken broth, add the mole pasta, the table chocolate and cook for 15 minutes without stopping the stirring until it has a smooth consistency. Adjust the seasoning to taste
    Place a mirror base of mole on a plate, add the quesadillas and soak to the middle, garnish with cream, cheese and oregano leaves.

    PRESENTATION

    TIPS

    Due to the amount of sugar in the banana, the dough may be a little sticky, oil your hands to be able to handle it well. Cook the mole over low heat, continuing to stir to avoid sticking. Completely remove the broth from the pot of beans, so that when cooking them, do not suffer from a reaction to the oil.
