Preparation
Cook the banana with the peel at medium heat. Peel and reserve.
Place the banana, flour, baking powder in a bowl, mix until you have a dough. Reserve.
In a pan over medium heat cook the bacon, until fried, add the onion, once transparent, add the beans, the epazote and with the help of a masher, crush the beans, cook for 5 minutes, season. Remove from heat and cool.
Place a little of the banana dough in a tortilla press with plastic wrap. Flatten and stuffed with beans and Oaxaca cheese, then close up like a quesadilla.
Heat oil over medium heat and fry the quesadillas. Place on absorbent paper to remove excess fat and reserve.
For the mole, heat the chicken broth, add the mole pasta, the table chocolate and cook for 15 minutes without stopping the stirring until it has a smooth consistency. Adjust the seasoning to taste
Place a mirror base of mole on a plate, add the quesadillas and soak to the middle, garnish with cream, cheese and oregano leaves.
