Ingredients

12 portions
  • 4 guajillo chilies, soaked and seeded
  • 2 ancho chili peppers, soaked and seeded
  • 3 cloves garlic
  • enough allspices
  • 1 teaspoon coriander seed
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 leaves bay (laurel)
  • 1 cup chicken soup
  • enough banana leaf, roasted
  • 1 kilo pork pulp
  • 1 kilo pork rib
  • enough avocado leaves
  • 1 cup nopal, cut into strips, for salad
  • 1/2 cups red onion, for the salad
  • 1/4 cups lemon juice, for the salad
  • enough salt, for the salad
  • 1/4 cups fresh coriander, for the salad
  • 1 teaspoon oregano, for the salad
  • enough tortilla, To accompany
  • enough green sauce, To accompany

Preparation

For the marinade, blend the guajillo chili, the broad chili, the garlic, the fat pepper, the coriander seed, the cumin, the oregano, the bay leaves, the chicken stock and reserve.
Place in a steamer, the water, the rack, the banana leaf, the pork pulp, then pour the marinade and intercalate with the avocado leaves, add the pork rib, avocado leaves, cover with banana leaf, cover and cook for 90 minutes.
For the nopales salad, mix the nopales, the purple onion, the lemon juice, season with the salt, coriander and oregano in a bowl, and let it pickle for 30 minutes.
On a board, chop the meat and reserve.
Serve the barbecue with the nopales salad, the green sauce and accompany with tortillas.
