Prepare this classic Mexican snack: Potato Crispy tacos with Pico De gallo. It's and easy recipe to cook and very practical option when you don't know what to prepare. Teh ingredients of these tacos are very easy to obtain and the best thing is that the are inexpensive.

Ingredients

4 portions
  • 2 liters Water
  • 1 tablespoon salt
  • 6 potatoes, peeled and cubed
  • 1/3 cups butter
  • 1/4 cups onion, finely chopped
  • 1/2 cups Cotija cheese
  • 12 corn tortillas
  • enough oil
  • 1/2 onions, finely chopped
  • 5 tomatoes, finely chopped
  • 1/2 cups fresh coriander, finely chopped
  • 1 habanero pepper, finely chopped
  • 1/3 cups lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1/3 cups sour cream
  • 1/3 cups fresh cheese, crumbled

Preparation

In a pot with water and salt cook the potato until it is soft. Drain and cool.
In a pan over medium heat, cook the onion with it, wait for it to change color, add the cooked potatoes and mash until it forms a puree, add the Cotija cheese and season with salt and pepper.
Place the corn tortillas on a board and fill with the potatoes, roll in a taco form and fry for a couple of minutes or until golden brown with hot oil. Drain on absorbent paper.
For the pico de gallo, in a bowl mix the onion with the tomato, cilantro, habanero pepper, lemon juice, salt and pepper and reserve.
Serve the tacos on a plate and place the pico de gallo, the cream, the crumbled cheese and enjoy it.

PRESENTATION

Serve on a plate and decorate with cream and crumbled cheese and of course, the pico de gallo. Serve with guacamole.

TIPS

For your tacos to have better support when cooking we recommend toothpicks to close them.
