Ingredients

6 portions
  • 1 leave bay (laurel)
  • 2 heads garlic, roasted
  • 2 onions, grilled
  • 1 bouquet thyme
  • 1 fist whole black pepper
  • 2 cloves
  • 1 fist oregano
  • 2 kilos pork bone, (quadril)
  • 1 kilo Pork Meat, (solid)
  • 1 kilo hominy, burst
  • 1/2 achiote
  • 1/4 guajillo chilies
  • 1 onion, finely chopped
  • 1 bouquet radish, chopped
  • 1 Romaine lettuce, chopped

Preparation

Boil the corn until it burst completely.
On a kitchen flannel, put the spices on the garlic, the onions and then tie everything and make it as a small piece of bread and put it on the corn that is cooking.
When the corn is cooked put the meat, wait for it to cook and add salt.
Cook the chilies and liquefy them with the achiote, empty them to the corn and the meat.
Once everything is cooked, remove the meat and discard it.
Serve the pozole with its accompaniments.

PRESENTATION

Serve the pozole in a deep dish and on top put the shredded meat and onion, radish, romanita, chile piquín, oregano, lemon. ready to savor, with rich toast

TIPS

Let the corn burst and the meat be cooked so that it is not beaten.
