Among Mexican snacks, fried quesadillas are a favorite and with this recipe for cheese quesadillas of rajas you can prepare them from home. Making them will only take 25 minutes and to highlight their flavor, do not forget to accompany them with cream and a dipped sauce. It is important that your filling is cold so that the mass of the quesadillas can be handled correctly.

Ingredients

4 portions
  • 2 cups cornmeal, for the mass
  • 1/4 cups wheat flour, for the mass
  • 1/8 cups vegetal oil, for the mass
  • 1 teaspoon Rexal® baking powder, (5 grams) for the dough
  • 1 teaspoon salt, for the mass
  • enough Water, for the mass
  • 1 tablespoon vegetal oil
  • 1/2 cups onion, filleted
  • 1 tablespoon garlic, finely chopped
  • 2 cups poblano rajas
  • 1 cup corn grain, yellow
  • 2 cups asadero cheese, cut into strips
  • enough vegetal oil, to fry
  • enough sour cream, at your service
  • enough lettuce, cut into strips, to serve
  • enough red sauce, at your service

Preparation

For the dough, mix cornmeal, wheat flour, vegetable oil, REXAL® baking powder, salt and water in a bowl.
For the filling, in a skillet over medium heat heat the oil, sauté the onion, garlic, add the poblano pepper rajas, the yellow corn kernels, season with salt and pepper and cook 5 minutes. Remove and let cool.
Place balls of dough on the press and make tortillas, fill with the rajas and the asadero cheese, and with the help of your fingers close as a quesadillas, pressing the edges so that they do not open.
Fry over medium heat in a pot with hot oil for 5 minutes, or until golden brown. Drain on absorbent paper, serve with cream, lettuce and sauce.

PRESENTATION

Serve the quesadillas accompanied with cream and the red sauce martajada.

TIPS

It is important that your filling is cold so that the mass of the quesadillas can be handled correctly.
