Ingredients

  • 1 clove garlic, for the sauce
  • 1/4 onions, for the sauce
  • 4 tomatoes, boiled, for the sauce
  • 3 guajillo chilies, soaked, for the sauce
  • 1/4 cups fresh coriander, for the sauce
  • 2 tablespoons oil, for the chilaquiles
  • to taste salt, for the chilaquiles
  • to taste black pepper, for the chilaquiles
  • 3 bags Tostitos® red sauce, (62 gr)
  • 1 chicken breast, cooked and shredded
  • 1/2 cups fresh cheese, grated, to decorate
  • 1/2 cups red onion, filleted, to decorate
  • 1/2 cups sour cream, to decorate
  • 1 avocado, in cubes, to decorate

Preparation

For the sauce: blend the garlic, the onion, the tomato, the guajillo pepper and the cilantro. Reservation.
In a pan, heat the oil over medium heat, pour the sauce, season with salt and pepper, and cook for 10 minutes. Add the Tostitos® red sauce and cook for 3 more minutes, or, until softened.
Empty the chilaquiles in a thread-shaped mold, compact with the help of a spoon, add the shredded chicken, cheese and onion, and cover with the rest of the chilaquiles until the mold is filled.
Unmold on a circular plate, add the sour cream and cover with the fresh cheese. Finally decorate with the purple onion and avocado slices.

PRESENTATION

Accompany with sour cream and fresh cheese, decorate with purple onion and avocado.

TIPS

To unmold your thread more easily, cover with aluminum, this way it will keep warm.
