Ingredients

6 servings
  • 600 grams of precooked corn cacahuazintle
  • 3 cloves of garlic peeled
  • 1 onion a quarter in chunk for corn, the rest finely chopped
  • 3 spoonfuls of Salt
  • 1 kilo of Pork Meat (solid)
  • 3 spoonfuls of Salt
  • 5 guajillo chili peppers deveined
  • 5 ancho chili peppers deveined
  • 5 peppercorn
  • 5 radishes wash, disinfect and dry. Cut into slices.
  • 1/4 of Cup of Romaine lettuce wash, disinfect and dry. Finely cut.
  • 10 green lemons
  • 1/2 Cup of sour cream
  • 10 fried or toasted corn tortilla

    Preparation

    In a medium saucepan, cook the corn with the garlic, onion, meat and salt until the corn and meat are well cooked.
    In a small pot, soften the chilies in hot water for 5 minutes, and grind them in the blender with a little water. Add that pasta to the corn broth and the meat.
    Remove the meat, undo it finely.
    Check the cooking of the corn and season.
    Serve with meat and side dishes.

    Be careful... written instructions don't say to blend the chilies into a paste. I didn't watch the video until I was done. Shoo I had to fish the chilies out of the pot to blend. No wonder my posole was looking to thin and not red enough. I added avocado to mine as a topping as well. So yummy. No se les olvide licuar los chiles. Las instrucciones escritas no lo dicen. Me entere de ultimo asta que vi el video por un comentario que leí.
