Stuffed chili peppers are prepared in different parts of Mexico and the varieties depend on the ingredients consumed in each region, so they are a very versatile dish. This recipe of güeros chiles stuffed with shrimp is very peculiar, both for the chili that it uses and for its filling and the combination creates a spectacular and different flavor to what is customary. Preparation
Marinade shrimp with cilantro, lemon juice and zest, salt and pepper. Refrigerate for 20 minutes.
For the sauce: in a pot with water, cook the tomatoes over medium heat with the garlic, onion and morita pepper; Wait 5 minutes and remove from the water. Grind everything together, with a little salt.
Heat a pan over medium heat, add the oil and fry the sauce; Cook for 5 minutes and reserve.
Roast the peppers and then put them in a bag for 5 minutes; clean the skin, veins and seeds and reserve.
Cook the shrimp in a pan over medium heat for 5 minutes and then fill the güeros peppers with them.
To serve, make a bed of sauce, place the peppers on top and enjoy!
