Shrimp Stuffed Güeros Chiles

Stuffed chili peppers are prepared in different parts of Mexico and the varieties depend on the ingredients consumed in each region, so they are a very versatile dish. This recipe of güeros chiles stuffed with shrimp is very peculiar, both for the chili that it uses and for its filling and the combination creates a spectacular and different flavor to what is customary. Follow the step by step to prepare them and do not forget to serve them with the morita sauce.


  • 1/2 cups fresh coriander, finely chopped
  • 2 lemons, (zest and juice)
  • to taste salt
  • to taste black pepper
  • 2 cups shrimp, baby
  • 1 clove garlic
  • 1/4 onions
  • 6 green tomatoes
  • 4 morita chili peppers
  • to taste salt
  • 3 tablespoons vegetable oil
  • 4 güero ppeppers
  • 3 tablespoons butter
  • 3 tablespoons garlic, finely chopped


Marinade shrimp with cilantro, lemon juice and zest, salt and pepper. Refrigerate for 20 minutes.
For the sauce: in a pot with water, cook the tomatoes over medium heat with the garlic, onion and morita pepper; Wait 5 minutes and remove from the water. Grind everything together, with a little salt.
Heat a pan over medium heat, add the oil and fry the sauce; Cook for 5 minutes and reserve.
Roast the peppers and then put them in a bag for 5 minutes; clean the skin, veins and seeds and reserve.
Cook the shrimp in a pan over medium heat for 5 minutes and then fill the güeros peppers with them.
To serve, make a bed of sauce, place the peppers on top and enjoy!


The peppers are accompanied with the morita sauce.


When cleaning the peppers, be very careful when opening and cleaning them to maintain their shape and avoid breaking them when filling them.
