Ingredients

4 portions
  • 500 grams tortilla dough
  • 500 grams pork rind, pressing
  • 1/4 onions, chopped
  • 1 clove garlic
  • 5 guajillo chilies
  • salt, to taste
  • 1/2 bunches fresh coriander, chopped
  • 100 grams panela cheese, grated

Preparation

In a pot with water, boil the guajillo chiles for a period of 20 minutes
Once the peppers have been cooked place them in a blender together with the water where they were boiled, onion and garlic are introduced to liquefy these ingredients for a lapse of 1 to 2 minutes
Strain the sauce obtained from the guajillo chile
In a pan previously rubbed with oleic oil fry the fried pork rind and with a spoon crumble it for a period of 20 minutes
Add the sauce to the pan where the fried pork rind is fried and add a pinch of salt (to taste), let cook for 30 minutes
Once the pork rind is ready, form the sopes with the dough and heat.
Once the tortilla is hot, serve the fried pork rind and prepare it to taste with cilantro, cheese, onion and sauce to taste.
