The sopitos is an important element in the gastronomy of the state of Colima, it is a traditional appetizer for dinner, they are made with handmade tortillas and are accompanied with ground meat and sauce.

Preparation
Boil 1 l of water, once boiling, put the ground meat (made ball, 3 pcs) with a pinch of salt and leave on low heat until the meat is cooked (30 minutes approx).
Sauce, boil 1/2 liter of water with the tomatoes and garlic. Blend with spices (cumin, oregano, salt, pepper), vinegar and little water, which is not very thick or very liquid.
Heat the oil (that covers 2 cms of the pan), and since it is very hot, fry the tortilla for sopitos (they can be soft or golden, to your liking, just keep in mind that you are going to bathe in broth, so I recommend that they be more golden brown so that they are resistant).
To serve, spread the beans in the tortilla, add the ground meat (already cooked, undo the balls so that it is like mince and can be served), add the lettuce, the tomato slices and the fresh cheese. When serving, add the caldito directly or put it aside.
