  • 300 grams of wheat flour for the dough
  • 50 grams of Butter for the dough
  • 1 piece of egg yolk for the dough
  • 1 Cup of Manchego cheese grated, for the dough
  • 1 teaspoonful of Salt for the dough
  • 1 teaspoonful of Rexal® Baking Powder for the dough
  • 2 spoonfuls of Water for the dough
  • 1 Cup of bacon finely chopped
  • 1/2 Cup of onion finely chopped
  • 1/2 tablespoon of garlic finely chopped
  • 1 kilo of beef steak (ball) cut into cubes
  • 1 Cup of Red bell pepper cut into strips
  • 1 Cup of yellow bell pepper cut into strips
  • 2 cups of Manchego cheese grated
  • 1 piece of egg to varnish
  • enough of pico de gallo to serve with
  • enough of guacamole to serve with

    Preparation

    Preheat the oven to 180 ° C.
    For the dough, in a bowl, beat the flour with butter, yolk, manchego cheese, salt, REXAL® baking powder and water until you have a homogeneous dough. Refrigerate covered for 15 minutes.
    Meanwhile, in a pan over medium heat, cook the bacon until it browns, then add the onion and garlic, and cook until bright. Add the steak, season with salt and pepper and cook until it begins to release its juices.
    Add the peppers, cook for 5 more minutes, add the cheese and remove. Chill the preparation.
    On a floured surface, spread the dough and cut a circumference of 35 cm in diameter. With a knife, form an asterisk in the center of the circle, taking care not to reach the edges of the dough. Around this, accommodate the filling, bend the tips of the asterisk towards the edge of the circumference to close the ring.
    Place the ring on a baking sheet and varnish with beaten egg. Bake for 20 minutes or until golden brown. Remove.
    Serve with pico de gallo and guacamole at the center.

    PRESENTATION

    TIPS

    It is important that you leave the dough to rest so that when it is extended it will not contract. Use any pot lid to mark the circumference of the dough.
