We present this recipe for stuffed ravioli, the perfect breakfast for you to start your day with all the protein and fiber you need. You can prepare it one night before, just save it in a tupper to take it to the office. Very rich!

Ingredients

1 portion
  • 1/2 cups bean, from the pot or with broth
  • 3/4 cups chicken consommé
  • 2 corn tortillas
  • 1 cup Poblano pepper Strips (Rajas)
  • 1 tablespoon vegetal oil
  • 1/4 onions, filleted
  • 1/2 cups panela cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1 tablespoon cream
  • enough rajas poblanas, to decorate
  • enough fresh coriander, to decorate

Preparation

Fry the onion in a hot pan with oil. Add the slices, cook and season with salt and pepper. Remove from heat and reserve.
Add to the blender the beans from the pot with the chicken broth and blend until you get a smooth sauce, remove from cooking and cook in a pot over medium heat, stirring constantly. Season and reserve.
Heat the tortillas in a griddle, once hot fill them with the mixture of rajas.
Place the stuffed tortillas on a plate, bathe them with the bean sauce, add a spoonful of cream and sprinkle the panela cheese. Garnish with purple onion, more slices and fresh cilantro.

PRESENTATION

Serve on a white plate.

TIPS

You can buy frozen chile poblano slices.
