  • 3/4 kilos potato
  • 1/2 cups chorizo
  • 1/2 cups pork rind, pressing
  • 2 cups bean
  • 10 guajillo chiles
  • 1 onion
  • 3 cloves garlic
  • 2 tomatoes
  • 1 kilo green tomato, bare
  • 5 jalapeño chiles
  • 15 dried chili
  • 1/4 cups fresh coriander
  • 1 liter oil
  • 1 avocado
  • 1 tablespoon salt
  • 1 cup water
  • 1/2 tablespoons pepper


For the stew of the potatoes, cook the potatoes with salt until soft and crush them. In a pan put oil to fry the sausage, ready the chorizo ​​to empty the potatoes. Reservation.
For the chicharron, chop the chicharron and in the blender, blend the 2 tomatoes with the cup of water, onion and garlic. Put the chicharron to heat with the blender mixture in a pan, let it cook for 15 minutes and reserve.
Fry the beans with the lard, you can add a little onion, garlic, chile serrano and consommé powder. Reservation.
For the marinade: fry the guajillo chiles with 1 clove of garlic. Place the chilies and garlic in the blender, add 1 more cup of raw oil and 1/2 onion. Blend and pass the mixture to a pan, heat for a few minutes.
For the sauce, cook the tomatoes and the serrano peppers or jalapeños until they change color. Blend with the dried chiles 1 garlic 1/2 onion and salt to taste. Add avocado, onion and cilantro to taste.
Let's start with the tacos, for this everything has to be very hot, because then it does not sweat, we will need a basket or a large plastic mold, I enter a large plastic bag and cover it with brown paper or tin foil. You are making your taquitos with the amount of stew you want. Velos accommodating and when you have a more or less amount of tacos, you pour the marinade very hot and if you like sliced ​​onions you can also add it. Arrange your taquitos fast so that the tortillas do not get cold and again the adobo and if you finish with your stews.
You wrap them very well, tie the bag and cover it with a cloth tablecloth or napkins for the tortillas. Let them sweat for about 30 to 1 hour, as everything will be hot and sweat in the bag.


You can add cabbage and cheese.
