Tacos Dorados de Papa and Pico de Gallo

This is a recipe that both children and adults love, it is very easy to make and excellent either for lunch or dinner, its delicious potato and cheese filling and pico de gallo sauce make this dish the perfect combination for your palate. Serve them with a delicious guacamole.

Ingredients

  • 2 liters of Water
  • 1 tablespoon of Salt
  • 6 pieces of potato peeled and cubed
  • 1/3 of Cup of Butter
  • 1/4 of Cup of onion finely chopped
  • 1/2 Cup of Cotija cheese
  • 12 pieces of Corn tortillas
  • enough of oil
  • 1/2 piece of onion finely chopped
  • 5 pieces of tomato finely chopped
  • 1/2 Cup of coriander finely chopped
  • 1 piece of habañero pepper finely chopped
  • 1/3 of Cup of lemon juice
  • 1 teaspoonful of Salt
  • 1/2 teaspoonful of Pepper
  • 1/3 of Cup of sour cream
  • 1/3 of Cup of fresh cheese fallen apart

    Preparation

    In a pot with water and salt cook the potato until it is soft. Drain and cool.
    In a pan over medium heat, cook the onion with it, wait for it to change color, add the cooked potatoes and mash until it forms a puree, add the Cotija cheese and season with salt and pepper.
    Place the corn tortillas on a board and fill with the potatoes, roll in a taco form and fry for a couple of minutes or until golden brown with hot oil. Drain on absorbent paper.
    For the pico de gallo, in a bowl mix the onion with the tomato, cilantro, habanero pepper, lemon juice, salt and pepper and reserve.
    Serve the taquitos on a plate and place the pico de gallo, the cream, the crumbled cheese and enjoy it.

    PRESENTATION

    Serve on a plate and decorate with cream and crumbled cheese and of course the pico de gallo. Serve them with guacamole.

    TIPS

    For your tacos to have better support we recommend using chopsticks to close them.
