Ingredients

  • 2 liters Water, to cook the beans
  • 2 cups bean
  • 3 tablespoons garlic, finely chopped for bean paste
  • 1/2 cups Cotija cheese, for bean paste

  • 2 cups nopal, cooked
  • 1/2 cups fresh coriander, finely chopped
  • 1 cup onion, finely chopped
  • 2 cups corn dough
  • 1 tablespoon lard, for the mass
  • to taste salt, for the mass
  • 2 tablespoons Water, for the mass
  • fresh cheeses, To accompany
  • enough red sauce, To accompany

Preparation

In a pot over medium heat, cook the beans with salt for 30 minutes, or until they are soft; Drain and reserve.
In a bowl, mash the beans until you have a puree, add the garlic, the cotija cheese, season with salt and reserve.
In a bowl mix the nopales, the onion and the cilantro. Reservation.
Mix the corn dough with the lard, add salt and water until you have a soft and moist dough. Reservation.
Take a ball of dough, with the help of your hands cup the center, fill with a little bean paste, close and give it a tlacoyo shape, as shown in the video.
On a griddle over medium heat, cook the Tlacoyos on both sides for 10 minutes. Reservation.
Serve with the nopales salad, fresh cheese and red sauce.

TIPS

If the bean paste is brittle, add 1 tablespoon of butter to moisturize and have a softer consistency.
