Slice the onion in julienne, cut the garlic into slices.
In a comal, toast the tomatoes, looking for them to brown evenly on all sides (for this, you have to constantly change their position). Once the skin is black, remove them from the heat and place them in a blender. Add the chipotle pepper, salt and pepper. Grind until a homogeneous paste is obtained.
To a pot add oil, add the onion. Once the onion looks transparent, add the tomato sauce and the sliced jo. Cook for 20 minutes, if necessary, add a glass of water so that the preparation does not dry out too much.
Add the meat and cook for 10 more minutes.
