If you love tacos al pastor, try this mini spin to the shepherd. It's a soft meat cooked in the oven with crispy strips of bacon in the center and a piece of caramelized pineapple that you do not want to share!

Ingredients

  • 1 kilo of pork loin head steak cut in half
  • 5 pieces of dried guajillo chile deveined and clean, powder (for marinade)
  • 1/2 Cup of annatto paste (for the marinade)
  • 1/4 of Cup of vinegar (for the marinade)
  • 3 spoonfuls of Orange juice Sour (for the marinade)
  • 1 teaspoonful of garlic powder (for the marinade)
  • 1 pinch of Pepper (for the marinade)
  • 1 pinch of Dried oregano (for the marinade)
  • 3 pinches of Salt (for the marinade)
  • 1 package of smoked bacon (200 g)
  • 1 piece of pineapple peeled and discouraged

    Preparation

    Preheat the oven to 190 ° C.
    Mix all the ingredients of the marinade and add to the meat. Marina for 20 minutes.
    In a baking tray, place the meat one on top of the other to simulate the top. Between layers, place 3 to 4 bacon strips according to size. Repeat until all the meat is finished.
    Insert a thick wooden stick in the center to hold the meat. Reservation.
    Cut a thick cube from the pineapple and insert it to the top of the wooden stick to hold it. The rest of the pineapple is poured into thin slices. Reservation.
    Bake the meat top and turn constantly so that the cooking is even. Once cooked, remove and let stand a few minutes.
    Serve and accompany with corn tortillas, sauces and pineapple.
