Preparation
For the pancakes, in a bowl beat the egg whites until they sponge to the point of nougat, little by little add the yolks one by one without stopping to beat. It incorporates wrapping nopales, onion, Panela Fud® Cheese and Pavo Fud® Virginia Ham, seasoned with salt and pepper.
Heat a pan over medium heat with the oil and with the help of a spoon, place a little mixture forming a pancake. Cook until browned on both sides, remove from the pan and drain on absorbent paper. Reserve covered.
For the sauce, heat a pot over high heat with the water, boil the tomatoes, with the garlic, onion and serrano pepper, for 30 minutes. Strain the ingredients and blend with the cilantro, the epazote, the cumin, season with a little salt.
Return the sauce to the heat and cook 5 more minutes or until thick.
Serve the pancakes on a plate with the sauce and sprinkle with the crumbled Panela Fud® Cheese.
