Nopal Pancakes, Ham and Panela Cheese in Green Sauce

If you like pancakes try this delicious option of pancakes capeadas of nopales with Panela Fud® Cheese and Pavo Fud® Virginia Ham, dipped in a green chile serrano sauce with epazote and coriander, this dish will leave you totally satisfied this Lent .

Ingredients

  • 3 pieces of egg white for weathered
  • 3 pieces of yolk for weathered
  • 1 Cup of nopal cut into cubes and cooked, for pancakes
  • 1/4 of Cup of White onion finely chopped for the pancakes
  • 1 Cup of Panela Fud® cheese cut into cubes, for the pancakes
  • 1/2 Cup of FUD® Pavo Virginia Ham diced for the pancakes
  • 1 pinch of salt and pepper for the pancakes
  • enough of oil to fry
  • 1 liter of Water for green sauce
  • 5 pieces of tomato for green sauce
  • 2 teeth of Garlic for green sauce
  • 1/2 piece of onion for green sauce
  • 1 piece of chile serrano for green sauce
  • 1/2 bunch of coriander for green sauce
  • 2 leaves of fresh epazote for green sauce
  • 1/2 teaspoonful of ground cumin for green sauce
  • 1 teaspoonful of Salt for green sauce
  • to taste of Panela Fud® cheese crumbled to serve

    Preparation

    For the pancakes, in a bowl beat the egg whites until they sponge to the point of nougat, little by little add the yolks one by one without stopping to beat. It incorporates wrapping nopales, onion, Panela Fud® Cheese and Pavo Fud® Virginia Ham, seasoned with salt and pepper.
    Heat a pan over medium heat with the oil and with the help of a spoon, place a little mixture forming a pancake. Cook until browned on both sides, remove from the pan and drain on absorbent paper. Reserve covered.
    For the sauce, heat a pot over high heat with the water, boil the tomatoes, with the garlic, onion and serrano pepper, for 30 minutes. Strain the ingredients and blend with the cilantro, the epazote, the cumin, season with a little salt.
    Return the sauce to the heat and cook 5 more minutes or until thick.
    Serve the pancakes on a plate with the sauce and sprinkle with the crumbled Panela Fud® Cheese.

    PRESENTATION

    Serve the pancakes in a sauce mirror and dip them with a little more sauce, sprinkle them with crumbled panela cheese.

    TIPS

    You can add ½ teaspoon of cream of tartar for each egg white, so that it lasts longer and the layering is not lowered. The cream of tartar is an additive or an acid salt that helps the egg whites to stabilize.
