Ingredients

4 portions
  • 3 egg whites, for weathered
  • 3 egg yolks, for weathered
  • 1 cup nopal, cut into cubes and cooked, for pancakes
  • 1/4 cups white onion, finely chopped for the pancakes
  • 1 cup Panela Fud® cheese, cut into cubes, for the pancakes
  • 1/2 cups FUD® Pavo Virginia Ham, diced for the pancakes
  • 1 pinch salt and pepper, for the pancakes
  • enough oil, to fry
  • 1 liter Water, for green sauce
  • 5 tomatoes, for green sauce
  • 2 cloves garlic, for green sauce
  • 1/2 onions, for green sauce
  • 1 serrano pepper, for green sauce
  • 1/2 bunches fresh coriander, for green sauce
  • 2 leaves fresh epazote, for green sauce
  • 1/2 teaspoons ground cumin, for green sauce
  • 1 teaspoon salt, for green sauce
  • to taste Panela Fud® cheese, crumbled to serve

Preparation

For the pancakes, in a bowl beat the egg whites until they sponge to the point of nougat, little by little add the yolks one by one without stopping to beat. It incorporates wrapping nopales, onion, Panela Fud® Cheese and Pavo Fud® Virginia Ham, seasoned with salt and pepper.
Heat a pan over medium heat with the oil and with the help of a spoon, place a little mixture forming a pancake. Cook until browned on both sides, remove from the pan and drain on absorbent paper. Reserve covered.
For the sauce, heat a pot over high heat with the water, boil the tomatoes, with the garlic, onion and serrano pepper, for 30 minutes. Strain the ingredients and blend with the cilantro, the epazote, the cumin, season with a little salt.
Return the sauce to the heat and cook 5 more minutes or until thick.
Serve the pancakes on a plate with the sauce and sprinkle with the crumbled Panela Fud® Cheese.

PRESENTATION

Serve the pancakes in a sauce mirror and dip them with a little more sauce, sprinkle them with crumbled panela cheese.

TIPS

You can add ½ teaspoon of cream of tartar for each egg white, so that it lasts longer and the layering is not lowered. The cream of tartar is an additive or an acid salt that helps the egg whites to stabilize.
