These rich tacos de nopales are a healthy alternative to consume at any time of the day, as they are easy to prepare and yield a lot; nopal helps prevent heart disease thanks to its high content of amino acids, fiber and antioxidant. They are also accompanied with a tasty crushed sauce, which you can also use to accompany other preparations.

Preparation
Heat a pot with water, add the nopales, the bicarbonate, the salt and cook for approximately 7 minutes; remove and strain. Reservation.
Mix the nopales with the red onion, the tomato, the lemon juice, the vinegar, the oregano, and season with salt.
Roast the tomatoes, onion, garlic and red pepper for 5 minutes (without burning). In a molcajete or mortar grind the ingredients, if necessary add a little water to grind better, add salt and reserve.
Assemble the tacos with the prepared nopales, accompany with salsa and Cotija cheese.
