Pambazos Mexicanos de Papa con Chorizo

The pambazos are a traditional Mexican appetizer where the "bolillo" is bathed with a guajillo chile sauce. It is filled with potato and chorizo ​​accompanied with a little fresh lettuce, aged cheese, cream and a raw green sauce. Delicious! Same as the lady on the corner.

Ingredients

  • 6 pieces of guajillo chile deveined, without seeds and soaked in hot water, for guajillo sauce
  • 1/4 of piece of White onion
  • 1 tooth of Garlic
  • 1 pinch of Salt
  • 1 tablespoon of lard
  • 2 cups of sausage in pieces
  • 3 pieces of potato Cooked, peeled and cut into large pieces, stuffed
  • 1 pinch of Salt
  • 2 pieces of roll
  • 1/4 of Cup of lard
  • 1 Cup of lettuce orejona cut into strips
  • 1 Cup of cream
  • 1 Cup of old cheese fallen apart
  • 1/2 Cup of green sauce raw

    Preparation

    Add the guajillo chile to the blender with the white onion, garlic, salt to your liking and a little water from where you soaked the chiles. Blend perfectly well without the sauce being very liquid.
    In a saucepan, add the butter and pour the sauce, season with salt and cook for 5 minutes.
    Heat a frying pan over medium heat, add the sausage and cook until the fat is loose, add the potato, mash the potatoes, cook for 3 minutes.
    In a short board the bread for pambazos in half, add the filling and varnish the bread with guajillo sauce. Reservation.
    Heat a pan, add butter and place the pambazo and turn the bottom part with guajillo sauce, fry until golden brown.
    Serve with cheese, cream, and salsa lettuce.

    PRESENTATION

    Serve the pambazos stuffed with a raw green sauce.

    TIPS

    Dip the pambazos in the guajillo sauce to absorb the taste of the bread and remain totally tasty.
