Pasilla Chili Enchiladas Stuffed with Panela Cheese

Picositas enchiladas in smooth pasilla chile sauce with tomato, stuffed with delicious and fresh panela cheese covered with cream, avocado, purple onion and almond. It is a tasty and different option to prepare original enchiladas, try them.

Ingredients

5 portions
  • 3 teaspoons oil
  • 3 cloves garlic, cut into quarters
  • 1/2 onions, cut into small pieces
  • 5 roma tomatoes, cut into quarters
  • 8 pasilla chili peppers, roasted, deveined and seeded
  • 2 black pepper
  • 1 pinch salt
  • 1/2 cups beef broth
  • 1 cup oil
  • 10 corn tortillas
  • 2 cups panela cheese, cut into small cubes
  • 1/2 cups almond, toasted and flied
  • 1/2 cups sour cream
  • 1/4 cups red onion, finely filleted
  • 1 avocado, cut into wedges

Preparation

Heat a T-fal pot over medium heat and when the red dot (Thermo-spot) is completely red, add the oil, garlic and onion. Cook until they take a golden color.
Add the tomato and cook 10 minutes. Add the pasilla pepper, pepper and salt, fill with the beef broth and wait for the boil to release. Remove from heat and reserve.
Blend the preparation with the T-fal® InfinyForce Blender with the “sauce” function.
Return the sauce to the T-fal Pot, and fry with a tablespoon of oil, let it boil and cook 5 minutes.
In a T-fal pan heat the rest of the oil and fry the tortillas for a minute, drain on absorbent paper.
Fill the tortillas with the panela cheese squares and roll up.
Serve on a plate the taquitos stuffed with panela cheese and bathe with the sauce.
Add almonds, cream, purple onion and avocado.

PRESENTATION

Serve the enchiladas and decorate with cream an avocado wedge, purple onion a little bit of almond fillet and coriander leaves and serve.

TIPS

You can use any other chili to change the flavor of the sauce.
