  • 250 grams spaghetti, by Luigi La Moderna
  • 200 grams smoked salmon, in sheets
  • 1 bunch spinach
  • 4 tablespoons sesame oil
  • 1 tablespoon chicken broth
  • black pepper
  • 10 tamarind, clean without bone
  • 150 grams piloncillo, in pieces
  • 2 morita pepper, clean and deveined, seedless and boiled
  • 1/4 cups Water


We cook our LUIGI pasta in salted water with a piece of onion and a clove of garlic, once it is al dente, we take it cold in cold water to cut the cooking of the pasta, and preserve its firmness, drain and season our Spaghetti Luigi and add the teaspoon of olive oil.
For the tamarind sauce: Clean and debone all the tamarind very well, boil and add the pieces of piloncillo, once it has boiled approximately 20 minutes, remove from the heat, clean the morcilla chiles, leave them without the cemilla, and boil them for 5 minutes , and already cold everything liquefied and we went through a colander, eliminate the chili. and place again on the open fire the boil for 1 minute
In a pan put the sesame oil, to warm a little and add our raisin together with spinach or watercress, we hope everything is incorporated very well, and emplatamos placing on our LUIGI pasta the sheets of smoked salmon, and bathe with our tamarind and morita sauce.


If you can add a little bit of Indian walnuts and sprinkle toasted sesame seeds.


Always prepare the sauce with morita and reserve a little without chili for children, or for those who do not eat chili.
