The cakes are a classic recipe and this delicious and original combination will fascinate you, as it has a filling of caramelized onions, with a mixture of cheeses such as manchego, roquefort and goat cheese.

Ingredients

8 portions
  • 250 grams flour, for the cake base
  • 125 grams butter, for the cake base
  • 1 egg, for the cake base
  • 1 teaspoon salt, for the cake base
  • 1 tablespoon vegetal oil, for the filling
  • 1 onion, filleted for the filling
  • 1/3 cups sugar, for the filling
  • 1/2 cups Red wine, for the filling
  • pilgrims, for the filling
  • 2 eggs, for the filling
  • 1/2 cups manchego cheese, for the filling
  • 50 grams roquefort cheese, for the filling
  • 1 cup goat cheese, for the filling
  • 1/2 cups whipped cream, for the filling
  • to taste salt, for the filling
  • to taste black pepper, for the filling
  • 2 pears, for the filling
  • butter, cut into cubes for the filling
  • 3 tablespoons sugar, for the filling
  • 1 pinch cardamom, for the filling
  • pilgrims, to decorate

Preparation

For the tart base, mix the flour, butter, egg and salt in a processor for 5 minutes, or until it has a homogeneous consistency. Roll out the dough to 3mm thick and place on a tart base. Refrigerate and reserve.
For the filling, in a pot over medium heat heat the oil and sauté the onion until it is soft, add the sugar and caramelize for 2 minutes, then pour in the red wine, add the rosemary and cook for 5 more minutes. Let cool and reserve.
In a bowl mix the eggs with the Manchego cheese, the Roquefort cheese, the goat cheese, the cream, add the caramelized onion, season with salt and pepper.
Pour the previous preparation over the tart dough, add the pears, season with a pinch of cardamom and pepper, and add the butter cubes.
Bake the cake at 180 ° C for 40 minutes.
Let cool slightly before serving.

PRESENTATION

On an extended platter, decorated with rosemary and accompanied by red wine.

TIPS

Freeze the base of the cake before baking, to make it firmer.
