Sopes are very traditional in Mexican cuisine. Go ahead and give them a twist and prepare these sopes with creamy poblano rajas, with squares of panela cheese and red sauce. They will create a sensation in your home.

Ingredients

6 portions
  • 3 cups poblano chile, roasted and deveined
  • 1 tablespoon oil
  • 1/2 onions, filleted
  • 1 tablespoon garlic, chopped
  • 1/2 cups ear corn
  • 1 cup sour cream
  • salt and pepper
  • oil, for frying
  • 6 sope shell
  • 1 cup refried beans
  • panela cheese, in cubes to decorate
  • red sauce, To serve

Preparation

On a board cut the poblano chiles into thin strips.
In a skillet over medium heat, heat a tablespoon of oil. Cook the onion and garlic until they are transparent, add the rajas and elotes and cook for 5 minutes. Add the cream and cook for 5 more minutes, season to your taste.
Fry the sopes with enough oil over medium heat and drain on absorbent paper.
On a plate place the sope, add the beans, rajas, and decorate panela cheese and serve with red sauce.

PRESENTATION

Serve in a pewter comal and decorate with panela cheese and accompany with red sauce.

TIPS

If you do not have a plastic bag to clean your chiles, you can put them in ice water, the skin will fall off easily.
