Cut the stem of the mushrooms and place them in a oven proof dish with the softest part up.
Mix well the vinegar, oil, basil, oregano, garlic, salt and pepper in a small bowl.
Pour over the mushrooms and let stand at room temperature for 15 minutes, turning twice.
Coat the comal or grill with oil and turn on at medium-high heat.
Place the mushrooms on the grill, reserving the marinade to varnish during cooking. Handle 5 to 8 minutes per side, or until softened. Varnish them with the marinade frequently.
Cover with the slices of cheese for the last 2 minutes to gratin.
Add vegetables to taste: lettuce, tomato, onion, avocado.
