These delicious Pumpkin Flower Fries Quesadillas are a delicious Mexican recipe very easy to cook.   • 1/4 of Cup of epazote finely chopped
  • 1 pinch of Salt
  • 1 Cup of Oaxaca cheese reduced in fat, shredded
  • enough of vegetable oil to fry quesadillas
  • 1 Cup of lettuce in strips, to accompany
  • 1/4 of Cup of sour cream low in calories, to accompany
  • 1 Cup of Panela cheese reduced in fat, crumbled, to accompany
  • 1/4 of Cup of green sauce To accompany

    Preparation

    For the dough, in a bowl combine corn flour with wheat flour, oil, water, salt and baking powder. Knead with your hands and add more water if necessary, to form a well-integrated dough. Reservation.
    Heat a medium skillet with oil over medium heat, add the white onion, garlic, pumpkin flower, epazote, cook for 5 minutes and season to your liking. Cool the filling and reserve.
    Form tortillas and fill with reduced fat Oaxaca cheese and sautéed pumpkin flower, close the tortillas to form the quesadilla. Form all the quesadillas and reserve.
    Heat a pot with vegetable oil, fry the quesadillas until they are crispy, remove the excess fat with an absorbent napkin.
    Open the quesadillas and serve with lettuce, low-calorie sour cream, reduced-fat panela cheese and salsa.

    PRESENTATION

    Serve the quesadillas with lettuce, cream, cheese and the sauce of your choice.

    TIPS

    The amount of water is very variable, start with a cup of water and add little by little as you "ask" for the dough.
