Quesadillas of Huitlacoche with Queso Oaxaca

The delicate flavor of the huitlacoche will make this delicious Mexican appetizer, combined with epazote, onion, garlic and a spicy touch of Serrano pepper. All this accompanied by oaxaca cheese. These quesadillas in blue dough, are totally delicious.

Ingredients

10 servings
  • 1 tablespoon of oil
  • 1 Cup of White onion filleted
  • 2 cloves of garlic finely chopped
  • 1 Cup of huitlacoche corn mushroom shelled
  • 1/4 of Cup of epazote finely chopped
  • 1 pinch of Salt
  • 1/2 kilo of corn dough blue
  • enough of Water
  • 1 tablespoon of lard
  • 1 pinch of Salt
  • 2 cups of Oaxaca cheese

    Preparation

    Heat the oil in a skillet over medium heat and cook the onion with the garlic and huitlacoche. Add the epazote, season to taste with salt. Reservation.
    In a bowl knead the mass of blue corn with a little water and lard, add a little salt. There should be a soft, moist dough.
    Form balls of dough and make tortillas in a tortilla press. Cook on a hot griddle until cooked and inflated. Add oaxaca cheese so that it melts and a little huitlacoche filling, closes in the form of quesadillas.
    Serve with a molcajeteada sauce.

    PRESENTATION

    Serve the quesadillas and decorate with a little epazote leaves, accompanied with a molcajeteada sauce.

    TIPS

    You can whiten the huitlacoche before cooking it, to remove some of the bitterness.

    Ya me las comí. Deliciosas. Solo me faltó eso del tip. Cómo es ese procedimiento. De cualquier manera a mí me encanta ese sabor característico huitlacoche.
