Quinoa patties with avocado dressing

We tell you how to prepare delicious vegetarian recipes. It's important that you cook healthy and delicious foods for your family, prepare these quinoa-based patties with lentil and potatoes, mixed with cilantro, white onion, broccoli, tomato and yellow baby corns, which will make them very nutritious. In addition they are accompanied by a spicy dressing with habanero roasted pepper, with a base o avocado and cilantro and a touch of lime juice.

Ingredients

8 servings
  • 1 1/2 cups of quinoa Cooked
  • 1 1/2 cups of lentil Cooked
  • 3/4 of Cup of potato Cooked
  • 1 Cup of coriander finely chopped
  • 1/2 Cup of White onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 1/2 Cup of broccoli cooked and cut into small trees
  • 1/2 Cup of corn yellow
  • 1/2 Cup of tomato cut into cubes
  • to taste of Salt
  • to taste of black pepper
  • 1 egg
  • 1/2 Cup of ground bread
  • 5 spoonfuls of olive oil to sauté the tortillas and for the dressing
  • 1 avocado for dressing
  • 1/2 Cup of coriander for dressing
  • 1/4 of Cup of lemon juice for dressing
  • 1 habanero pepper roast, for dressing
  • 1/4 of White onion for dressing

Preparation

For the patties, process the quinoa together with the lentils and the potato until obtaining a homogeneous mixture.
Place the previous preparation in a bowl and mix with the cilantro, the white onion, the garlic, the broccoli, the yellow baby corn, the tomato and season with salt and pepper. Add the egg and the crushed bread, mix well and form your patties of approximately 30 grams with your hands.
Heat a pan over medium heat with a couple of tablespoons of olive oil and cook the patties until they are done and browned on both sides, remove from the pan and reserve hot.
For the dressing, blend the rest of the olive oil with the avocado, cilantro, limon juice, habanero pepper and onion, until you get a smooth dressing. Season with salt and pepper.
Serve the patties with a little dressing and salad. Enjoy

You can bake the pancakes at 180 °C (356°F) to make them healthier.
