Shrimp Stuffed Chayotes

Chayotes are one of the easiest vegetables to cook, and with this recipe you will check. To include more vegetables in your meals, try these chayotes stuffed with delicious shrimp, prepared with a creamy sauce and very well seasoned with garlic and guajillo chili. This step by step guarantees you that you are very rich and to make them even more special, you can gratin them in the oven.

Ingredients

4 servings
  • 2 chayote squash skinless and halved
  • enough of Water for the chayotes
  • 1 teaspoonful of Salt for the chayotes
  • 2 spoonfuls of Butter for the filling
  • 1 clove of garlic chopped, for the filling
  • 3 pieces of guajillo chili pepper deveined and cut into strips, for filling
  • 2 cups of shrimp clean, for filling
  • 1 Cup of cream cheese diced, for filling
  • 1/2 Cup of sour cream for the filling
  • 1/4 of Cup of milk for the filling
  • 2 spoonfuls of parsley finely chopped, for filling
  • enough of Salt for the filling
  • enough of black pepper for the filling
  • enough of flakes of chili to decorate
  • enough of red onion to decorate
  • enough of parsley to decorate

    Preparation

    In a saucepan with hot water, cook the chayotes with salt until they are soft. Drain them and let them cool.
    On a table, cup the chayotes with the help of a spoon, finely chop the filling or pulp and reserve.
    In a skillet with butter over medium heat, brown the garlic until it changes color, add the guajillo pepper, the shrimp, the cream cheese, the sour cream, the milk, the chayote pulp and the parsley. Season with salt and pepper. Reservation.
    With the help of a spoon, fill the chayotes with the shrimp, decorate with parsley, purple onion and chili flakes.

    PRESENTATION

    Garnish with chili flakes, purple onion and chopped parsley.

    TIPS

    If you wish you can add cheese and gratin the dish in the oven for a few minutes. Do not overcook the shrimp, so that they are not taffy.
