Chayotes are one of the easiest vegetables to cook, and with this recipe you will check. To include more vegetables in your meals, try these chayotes stuffed with delicious shrimp, prepared with a creamy sauce and very well seasoned with garlic and guajillo chili. Ingredients

4 portions
  • 2 chayote squash , skinless and halved
  • enough Water, for the chayotes
  • 1 teaspoon salt, for the chayotes
  • 2 tablespoons butter, for the filling
  • 1 clove garlic, chopped, for the filling
  • 3 guajillo chilies, deveined and cut into strips, for filling
  • 2 cups shrimp, clean, for filling
  • 1 cup cream cheese, diced, for filling
  • 1/2 cups sour cream, for the filling
  • 1/4 cups milk, for the filling
  • 2 tablespoons parsley, finely chopped, for filling
  • enough salt, for the filling
  • enough black pepper, for the filling
  • enough flakes of chili, to decorate
  • enough red onion, to decorate
  • enough parsley, to decorate

Preparation

In a saucepan with hot water, cook the chayotes with salt until they are soft. Drain them and let them cool.
On a table, cup the chayotes with the help of a spoon, finely chop the filling or pulp and reserve.
In a skillet with butter over medium heat, brown the garlic until it changes color, add the guajillo pepper, the shrimp, the cream cheese, the sour cream, the milk, the chayote pulp and the parsley. Season with salt and pepper. Reservation.
With the help of a spoon, fill the chayotes with the shrimp, decorate with parsley, purple onion and chili flakes.

PRESENTATION

Garnish with chili flakes, purple onion and chopped parsley.

TIPS

If you wish you can add cheese and gratin the dish in the oven for a few minutes. Do not overcook the shrimp, so that they are not taffy.
