  • 2 1/2 cups flour, 325 g, for the dough
  • 2 tablespoons sugar, 20 g, for the dough
  • 1 tablespoon dry yeast, 5 g, for the dough
  • 1/2 tablespoons salt, 10 g, for the dough
  • 1 cup Water, warm, 250 ml, for the dough
  • 2 cups tomato sauce, for pizza, hot
  • 2 cups mozzarella cheese, grated
  • 1/2 cups sausage, Cooked
  • 1/2 cups Canadian lomo, sliced
  • 1/2 cups pepperoni, sliced
  • 1/2 cups salami, sliced
  • 4 San Juan® Eggs

For the pizza dough, mix the flour, sugar, yeast and salt in a bowl; Add the warm water little by little and knead, incorporating everything until obtaining a firm, smooth and uniform texture. Let it rest for about an hour until the dough has doubled in size, then punch the dough out to remove excess air.
Divide the dough according to the size of the pan you are going to use; shape the dough by rolling it a little: spread and then join the ends to the center to form a navel, then turn it over to face the table and apply pressure with the back of your hand, turning clockwise.
Spread the dough with the help of a rolling pin and place it in the pan, form the crust and place the sauce, cheese and cold meats, cover and cook at very low temperature for 30 minutes or until it is ¾ cooked.
Break the Eggs San Juan® into a small bowl one by one and from there add them one by one over the cold meats on the pizza, so that they keep their shape.
Cover the skillet and cook until fully cooked, about 15 more minutes.
Serve the pizza and garnish with chives.

The depth and material of the pan are important for excellent cooking, so it is best if you use a 3 cm high double-bottomed or iron skillet. You must arrange the San Juan® Eggs in such a way that the ingredients form a barrier between them.
