Leave the classic cakes aside and prepare this recipe of Spicy Sausage and Potato Cakes with Chipotle Sauce, which are stuffed with cream cheese, Manchego cheese and cotija cheese. This is a very simple homemade recipe to eat with the whole family.The best thing of all is that you can make them of mashed potato with sausage and they will be more fluffy.

Ingredients

6 servings
  • 1 Cup of whipping cream
  • 1/4 of Cup of chipotle peppers in adobo sauce
  • 2 pieces of chipotle chile pepper dry
  • 1/2 Cup of cream cheese
  • 1/2 Cup of chicken soup
  • 1 pinch of Salt
  • 1 pinch of black pepper
  • 3 pieces of potato cooked
  • 1/2 Cup of sausage sautéed
  • 1/2 Cup of cream cheese
  • 1 Cup of Cotija cheese
  • 1/4 of Cup of Manchego cheese
  • 1/4 of Cup of cornstarch
  • 1 piece of egg
  • enough of cooking spray oil
  • enough of sausage crumbled, to serve
  • enough of purple cabbage in strips
  • enough of cheese cotija

    Preparation

    For the sauce, blend the whipping cream with the chipotles in adobo, dry chipotle chile, the cream cheese, the chicken broth, the salt and the pepper until you get a smooth sauce. In a saucepan cook the sauce for 10 minutes until it changes color and set aside.
    For the cakes, in a bowl mix the potato with the sausage, the cream cheese, the Cotija cheese, the manchego cheese, the corn starch and the egg. Form the cakes with your hands.
    Heat a skillet over medium heat, sprinkle some cooking spray and cook the potato cakes until golden brown on both sides. Serve with the sauce, sprinkle with more chorizo, purple cabbage and cotija cheese.

    PRESENTATION

    Serve with the chipotle sauce and sprinkle with sausage, purple cabbage and Cotija cheese.

    TIPS

    The mixture of the cakes should be firm so that you can shape it, if it sticks add a little more corn starch.
