This dish is ideal for a Monday without meat as it does not contain any animal products, but is full of flavor. Rich tostados with beans and vegan sausage with chickpeas and accompanied by an avocado cream. Go ahead and prepare them.

Ingredients

4 portions
  • 2 cups chickpea, for the chorizo
  • 1/2 cups walnut, for the chorizo
  • 2 tablespoons olive oil
  • 1/4 cups onion
  • 1 tablespoon garlic
  • 2 tablespoons paprika
  • 1 teaspoon cumin
  • 1/4 cups chilli powder
  • 1/2 teaspoons thyme
  • 1 teaspoon cinnamon
  • 1/2 teaspoons Cayenne pepper
  • 1/2 teaspoons black pepper
  • 1/2 teaspoons clove
  • 1/2 teaspoons sea salt
  • 1 tablespoon red wine vinegar
  • 1 avocado
  • 1/4 cups almond milk
  • 1 teaspoon lemon juice
  • 1/2 teaspoons salt
  • 8 corn tortilla chip
  • 1/2 cups refried beans
  • to taste lettuce, to decorate
  • to taste fresh coriander, to decorate
  • to taste cream, vegan, to serve

Preparation

For the vegan sausage, in a processor, mix the chickpeas with the nut, taking care not to undo them completely, it must be a thick texture.
In a pan add the olive oil and add the onion, add the garlic and the processor mixture, add the paprika, the cumin, the chilli powder, the thyme, the cinnamon, the cayenne pepper, the pepper, the clove , the grain salt and the red wine vinegar. Cook for 10 minutes until all the ingredients are incorporated and the walnuts release the oil.
For the cream, in a processor add avocado, almond milk, lemon juice, salt and process to obtain a creamy and smooth puree.
Serve vegan sausage on toast with refried beans, garnish with lettuce, avocado cream, vegan cream and cilantro. Enjoy
