Vegan Corn Mushroom Mexican Lasagna

Vegan recipes can be as delicious as you've ever imagined, and this recipe for Vegan Corn Mushroom Mexican Lasagna is a great example, which is made of corn tortilla, huitlacoche or corn mushroom, squash and corn. Remember that although the vegan cheese and cream options vary, you can also make your own nut-based cream.

Ingredients

4 servings
  • 1 tablespoon of vegetable oil
  • 1/2 Cup of onion finely chopped, for filling
  • 1 tablespoon of garlic finely chopped, for filling
  • 1 Cup of corn kernels for the filling
  • 1/4 of Cup of epazote finely chopped, for filling
  • 2 cups of huitlacoche corn mushroom fresh, for the filling
  • 1 Cup of squash blossom for the filling
  • enough of salt and pepper
  • 12 pieces of Corn tortillas
  • enough of vegetable oil to fry
  • 1 Cup of cream vegan
  • 1 Cup of cheese vegan
  • enough of squash blossom to granish
  • enough of parsley to garnish

    Preparation

    Preheat the oven to 180°C. (350°F)
    In a pan over medium heat heat the oil, sauté the onion until it has a golden brown color, add the garlic, the corn kernels, the epazote, the huitlacoche mushrooms and the pumpkin flower. Cook 15 minutes and season with salt and pepper.
    In a skillet over medium heat, fry the tortillas with a little hot oil and place on absorbent paper to remove the excess fat.
    Arrange a layer of tortillas in a oven proof dish. Add a little of the huitlacoche mushroom filling, the vegan cream, the vegan cheese, and repeat this process until the oven proof dish is filled. Finish with cheese and bake about 10 minutes.
    Remove from oven and garnish with pumpkin flower and chopped parsley.

    PRESENTATION

    Decorate with pumpkin flower and parsley leaves.

    TIPS

    Rinse the huitlacoche corn mushrooms very well with water and baking soda before using it so that it does not taste bitter. Find vegan cheese and cream in specialty stores. You can prepare your own vegan cashew based cream.
