You have to try this delicious vegan mushrooms pibil style; with a marinade of achiote and guajillo chili, it's ideal for a Monday without meat and the best thing is that in just 3 steps you will have it ready. Serve it with tortillas and pickled onions with habanero.

Ingredients

4 portions
  • 4 cups oyster mushroom
  • 1 tablespoon annatto
  • 1/2 cups orange juice, natural
  • 2 guajillo chilies, seedless and hydrated
  • 1/2 white onions
  • 1/2 red onions
  • 2 cloves garlic
  • 1/4 cups vegetable broth
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, finely chopped
  • 1 teaspoon thyme, powdered
  • 2 leaves bay (laurel)
  • to taste corn tortilla, to serve
  • to taste onion powder, pickled

Preparation

On a table shred the mushrooms with his hands.
Blend achiote with orange juice, guajillo chili, onions, garlic, vegetable broth, oregano, salt and pepper.
In a pot add the olive oil and cook the garlic together with the mushrooms for 5 minutes. Add thyme, achiote sauce, bay leaf and simmer for 10 minutes or until reduced, moving constantly so they do not stick.
Serve in tacos and serve with pickled onions.

TIPS

The mushrooms contain a large amount of water, so they are greatly reduced, consider having a lot so that you will have enough.
