Vegetable Pancakes with Pumpkin Blossom Sauce

Potato pancakes are a classic, so we leveled them up with carrot and zucchini. Prepare this recipe for vegetable pancakes bathed in a creamy pumpkin blossom sauce and served with panela cheese. They are a real delight that also has a very easy to do step by step. These pancakes are an excellent option for a meatless Monday, nutritious and delicious.

Ingredients

4 portions
  • 2 cups potato, cooked and quartered
  • 1 cup pumpkin, diced
  • 1 cup carrot, cooked and diced
  • 1/2 cups onion, finely chopped
  • 1/4 cups coriander, finely chopped
  • 2 San Juan® Eggs
  • 3/4 cups ground bread
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • to taste salt
  • to taste black pepper
  • enough oil, to fry
  • 1/4 onions, cut into quarters
  • 1 clove garlic
  • 2 cups pumpkin flower
  • 1 cup milk
  • 1/2 cups cream cheese
  • 1/2 cups chicken soup
  • enough coriander, finely chopped, to decorate

Preparation

With the help of a masher, mash the potatoes until they have a consistency of puree; add the pumpkin, carrot, onion, coriander, pieces of Egg San Juan®, breadcrumbs, garlic powder, oregano, salt and pepper, and mix until combined. Reservation.
On a table form pancakes with the help of your hands and reserve in the refrigerator for 10 minutes.
Heat oil in a pan and fry the pancakes for 5 minutes.
For the pumpkin blossom sauce, cook the onion, garlic, and pumpkin blossom in a pan. Then blend together with the milk, cream cheese and chicken broth.
Cook the sauce for 15 minutes and rectify seasoning.
Serve the pancakes and bathe with the sauce, decorate with cheese and the pumpkin flower. Enjoy.

TIPS

If you don't have time to refrigerate your pancakes, freeze them for 5 minutes and voila, you can fry them without any problem.
