Vegetable Pancakes with Pumpkin Blossom Sauce

Potato pancakes are a classic, so we leveled them up with carrot and zucchini. Prepare this recipe for vegetable pancakes bathed in a creamy pumpkin blossom sauce and served with panela cheese.   • 2 cups potato, cooked and quartered
  • 1 cup pumpkin, diced
  • 1 cup carrot, cooked and diced
  • 1/2 cups onion, finely chopped
  • 1/4 cups coriander, finely chopped
  • 2 San Juan® Eggs
  • 3/4 cups ground bread
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • to taste salt
  • to taste black pepper
  • enough oil, to fry
  • 1/4 onions, cut into quarters

  • 2 cups squash blossom
  • 1 cup milk
  • 1/2 cups cream cheese
  • 1/2 cups chicken soup
