This delicious green mushroom aguachile with habanero chile tatemado is the ideal choice if you do not eat animal protein. It is accompanied with freshly baked sesame toast, so it is a very healthy dish for your diet.

Ingredients

4 servings
  • 1 Cup of cucumber without shell
  • 1 piece of green tomato
  • 1/2 Cup of lemon juice
  • 1 piece of habanero pepper roast
  • 1/4 of piece of White onion
  • 1/4 of Cup of coriander
  • 1 tablespoon of Salt
  • 1 pinch of black pepper
  • 3 cups of mushroom filleted
  • 1 Cup of red onion filleted
  • 1 piece of cucumber cut in half moons and in battens, to decorate
  • 1/2 kilo of corn dough for sesame toast
  • enough of Water for sesame toast
  • 1/4 of Cup of toasted sesame seeds for toast
  • 1 tablespoon of Salt for sesame toast
  • to taste of coriander
  • to taste of habanero pepper cut into strips
  • to taste of green lemon
  • 1 tablespoon of olive oil for the mixture of mushrooms, onion and cucumber

    Preparation

    Preheat oven to 160 ° C.
    Blend the cucumber with tomato, lemon juice, habanero pepper, white onion, cilantro, salt, pepper until you get a smooth mixture.
    In a bowl, mix the mushrooms with the onion, the cucumber in half moons and the previous mixture. Marina about 20 minutes and rectifies seasoning.
    For sesame toast, mix the corn dough with water, sesame and salt until you get a liquid but thick mixture. Spread a thin layer of the mixture on a tray with waxed paper or silicone mat, bake for 15 minutes, chill, peel and chop.
    Serve the aguachile and decorate with the habanero pepper, the cucumber in ribbons, the coriander and accompany with the sesame toast.

    PRESENTATION

    Serve in Aguachile with the purple onion and cucumber rolls.

    TIPS

    You can mix the Aguachile with olive oil to give a more peculiar flavor.

    Hice esta receta pero en lugar de setas le puse camarones, lechuga y aguacate, quedaron riquísimas las tostadas.
