"Arroz" from Cauliflower to the Mexican

Ingredients

4 servings
  • 1 piece of cauliflower
  • 1/2 Cup of olive oil
  • 1/4 of piece of onion finely chopped
  • 1 clove of garlic finely chopped
  • 2 cups of tomato puree
  • 1 piece of serrano pepper deveined and clean, cut in two
  • 1 can of vegetable pre-cooked and drained
  • 3 pinches of Salt
  • 2 pinches of black pepper
  • 1 twig of coriander

    Preparation

    Clean the cauliflower and separate medium pieces. Process in a food processor until finely chopped, taking care that the consistency is fluffy like rice. Reservation.
    In a pan heat the oil over medium heat and cook the onion until it is transparent. Add the garlic and cook for a minute.
    Add cauliflower and cook 3 minutes on high heat until crispy. Add the tomato puree and chili and cook on low heat, about 5 to 8 minutes until the cauliflower is cooked and the liquid is reduced.
    Add the vegetables and mix very well, cook one more minute. Season and decorate with coriander, serve.

    PRESENTATION

    Serves as a garnish for your main course.

    TIPS

    You can cook the cauliflower in the oven at 200 ° C for 15 minutes instead of in the pan.
