Cheese Pancakes with Corn

The pancakes are always a rich, fast and delicious dish. Prepare these crunchy corn-based pancakes with cream cheese and manchego cheese, a light touch of golden bacon, with a panko breadcrumbs crust and served with a coriander and chipotle dressing. Simply delicious!

Ingredients

  • 2 cups of cream cheese cut into cubes for pancakes
  • 1 Cup of Manchego cheese grated, for pancakes
  • 2 cups of a grain of corn yellow, for pancakes
  • 3 spoonfuls of White onion
  • 3 spoonfuls of bacon fried and finely chopped
  • 1/2 Cup of panko to bread
  • 1 Cup of ground bread to bread
  • 1 pinch of Salt to bread
  • 2 pieces of egg milkshake for bread
  • 1/4 of Cup of oil
  • 1/2 Cup of sour cream for dressing
  • 1/2 Cup of Mayonnaise for dressing
  • 1 tablespoon of lemon juice for dressing
  • 1/4 of Cup of coriander
  • 2 pieces of marinated chipotle chile
  • to taste of coriander To accompany
  • to taste of fresh cheese To accompany
  • to taste of avocado cut into cubes to accompany

    Preparation

    For the pancakes, in a bowl mix the cream cheese with the manchego cheese, with the yellow corn, the garlic, the white onion and the bacon until obtaining a consistent mixture. Form the pancakes with the help of your hands and reserve.
    In a bowl, combine the panko with the ground bread and salt. Beat the pancakes with flour, egg and bread crumbs.
    Heat a pan over medium heat with the oil, cook the pancakes until they are crispy. Drain on absorbent paper.
    For the dressing, blend the cream with mayonnaise, lemon juice, cilantro, salt and pepper.
    Serve your pancakes with the dressing, coriander leaves, fresh cheese and avocado to accompany. Enjoy

    TIPS

    If the breaded is not perfect you can make a double breaded so it is very crispy. Serves hot to enjoy the perfect consistency of melted cheese.
