2 portions
  • 30 grams San Juan® Egg White
  • 30 grams San Juan® Egg White, to bread
  • 350 white mushrooms, fine filleting
  • 150 milliliters milk
  • 60 grams flour
  • 50 milliliters sugar free whipping cream
  • 50 milliliters red sauce
  • 50 milliliters green sauce
  • 30 milliliters extra virgin olive oil
  • 30 grams butter
  • 5 grams salt
  • 2 grams nutmeg
  • 100 grams ground bread
  • 500 milliliters vegetal oil
  • 1 strawberry
  • 3 baby spinach
  • 1 flower, edible
  • 2 baby carrots, to butter

In a pan heat the olive oil, sauté the mushrooms, remove and reserve.
Add flour in the hot oil, add the milk and cook to thicken, salt and pepper and add a pinch of nutmeg, remove.
