Preparation
Cook the potatoes in a pot with water, until they are soft. Remove from the water and let cool.
In a bowl place the potatoes and mash until they form a puree, add salt to taste, eggs and mix well, add the bread crumbs and incorporate. Form the pancakes and reserve.
