Prepare these delicious weathered pumpkin flowers stuffed with Oaxaca cheese and accompanied by a delicious red sauce, and you will have a perfect vegetarian recipe for any day of the week. Take this season to use the pumpkin flower, an ingredient with a special flavor and benefits such as its high content of vitamin C, in addition to minerals such as potassium, magnesium and calcium.

Ingredients

4 portions
  • 1 teaspoon vegetal oil, for the sauce
  • 1/4 white onions, chopped for the sauce
  • 1 clove garlic, for the sauce
  • 4 tomatoes, for the sauce
  • 2 güeros chilis, deveined and seeded, in pieces, for the sauce
  • 1 serrano pepper, deveined and seeded, for the sauce
  • 3/4 cups Water, for the sauce
  • 1 Cube Knorr® vegetable bouillon, for the sauce
  • 2 bunches pumpkin flower
  • 1 cup Oaxaca cheese, shredded
  • 2 egg whites, for the weathered
  • 1 egg yolk, for the weathered
  • enough Cornstarch®
  • 1/2 cups vegetal oil, to fry
  • 1 fresh coriander
  • 1 avocado, sliced, to decorate

Preparation

For the sauce, in a pot over medium heat fry the onion and garlic with the oil, until they are bright. Add tomatoes, peppers and cook for about 10 minutes.
Add the water and when it boils, dissolve the Knorr® vegetable stock cube, cook about 10 more minutes.
Blend the preparation until you get a smooth sauce and reserve.
Open the pumpkin flowers carefully and remove the pistils. Fill them with Oaxaca cheese and reserve.
In a bowl and with the help of a blender, beat the egg whites until firm peaks form, add the yolk and continue beating until incorporated.
Pass the pumpkin flowers through Maizena® and cover with the weathered. Fry in a pan over medium heat with the oil until golden brown on all sides and drain on absorbent paper.
Serve the hot sauce in mirrored dishes, arrange the pumpkin flowers, decorate with cilantro and avocado. Enjoy

PRESENTATION

Serve the sauce as a mirror and decorate with slices of serrano pepper and avocado.

TIPS

Add a pinch of tartar creme or lemon drops to the whites to make them more stable.
