Preparation
Cook the spaghetti in a pot with boiling water and salt, according to the package instructions. Drain and reserve.
Blend coconut milk, peanuts, sesame seeds, curry powder, salt and pepper. Reservation.
Heat medium skillet over medium heat add coconut oil, garlic, peanuts and ginger.
Add the spaghetti and the sauce and cook 5 minutes to reduce the sauce a little. Season, remove from heat.
Serve the spaghetti with chopped scallions and fresh coriander leaves. Enjoy
