If you like tacos and are looking for a different option for everyday, one without animal proteins, prepare these delicious vegan mushroom tacos, cooked in a marinade of guajillo and morita chilies, served in corn tortilla with beans, tomato and cilantro.

Preparation
In a bowl, soak the chilies in hot water until the become soft, reserve.
Blend the chilies soaked with a little of the liquid, the onion, the garlic, the vinegar, the pepper, the cumin and the orange juice until obtaining a smooth adobo.
Heat a pan over medium heat with the oil and cook the onion until it is bright, add the mushrooms and the marinade, cook 5 minutes more, season to taste with salt and pepper.
On medium heat, heat the tortillas and then add the beans.
Serve the marinated mushrooms over the tortillas, garnish with avocado, tomato and cilantro. Enjoy
