Vegan Mushrooms in Adobo Tacos

If you like tacos and are looking for a different option for everyday, one without animal proteins, prepare these delicious vegan mushroom tacos, cooked in a marinade of guajillo and morita chilies, served in corn tortilla with beans, tomato and cilantro.

Ingredients

4 servings
  • 4 pieces of guajillo chili pepper deveined, for the marinade
  • 4 pieces of morita chile pepper deveined, for the marinade
  • 1 Cup of carbonated water hot
  • 1/4 of piece of White onion for the marinade
  • 2 cloves of garlic for the marinade
  • 1/4 of Cup of White vinegar for the marinade
  • 1 teaspoonful of allspices for the marinade
  • 1 teaspoonful of cumin for the marinade
  • 1/4 of Cup of orange juice for the marinade
  • 1 tablespoon of olive oil
  • 1 Cup of White onion filleted
  • 2 cups of mushroom filleted
  • 1 tablespoon of Salt
  • 1 tablespoon of black pepper
  • 8 pieces of Corn tortillas
  • 3/4 of Cup of refried beans
  • enough of avocado cut into slices
  • enough of tomato cut into slices
  • enough of coriander

    Preparation

    In a bowl, soak the chilies in hot water until the become soft, reserve.
    Blend the chilies soaked with a little of the liquid, the onion, the garlic, the vinegar, the pepper, the cumin and the orange juice until obtaining a smooth adobo.
    Heat a pan over medium heat with the oil and cook the onion until it is bright, add the mushrooms and the marinade, cook 5 minutes more, season to taste with salt and pepper.
    On medium heat, heat the tortillas and then add the beans.
    Serve the marinated mushrooms over the tortillas, garnish with avocado, tomato and cilantro. Enjoy

    PRESENTATION

    Serve the tacos on a plate with the avocado, tomato and cilantro.

    TIPS

    If you wish, you can use any kind of mushrooms.
