Vegan Pickled Mushrooms Tacos

If you like tacos and want a different option for everyday without animal protein, cook these delicious vegan tacos of mushrooms, cooked in a marinade of guajillo and morita pepper, served in corn tortilla with beans, tomato and cilantro.

Ingredients

  • 4 pieces of guajillo chile deveined, for marinade
  • 4 pieces of chile morita deveined, for marinade
  • 1 Cup of soda hot
  • 1/4 of piece of White onion for marinade
  • 2 cloves of Garlic for marinade
  • 1/4 of Cup of White vinegar for marinade
  • 1 teaspoonful of fat pepper for marinade
  • 1 teaspoonful of cumin for marinade
  • 1/4 of Cup of Orange juice for marinade
  • 1 tablespoon of olive oil
  • 1 Cup of White onion filleted
  • 2 cups of mushroom filleted
  • 1 tablespoon of Salt
  • 1 tablespoon of Pepper
  • 8 pieces of Corn tortillas
  • 3/4 of Cup of refried beans
  • enough of avocado cut into slices
  • enough of tomato cut into slices
  • enough of coriander

    Preparation

    In a bowl, soak the chiles with hot water until the get soft, reserve.
    Blend the chilies soaked with a little of the liquid, the onion, the garlic, the vinegar, the pepper, the cumin and the orange juice until obtaining a smooth marinade.
    Heat a pan over medium heat with the oil and cook the onion until it is bright, add the mushrooms and the marinade, cook 5 minutes more, season to taste with salt and pepper.
    On a medium heat, heat the tortillas and then add the beans.
    Serve the marinade mushrooms over the tortillas, garnish with avocado, tomato and cilantro. Enjoy

    PRESENTATION

    Serve the tacos on a plate with the avocado, tomato and cilantro.

    TIPS

    If you wish you can use any kind of mushroom.
