If you are looking for a different option than usual, you can not stop trying these vegetarian tacos made with a soft chard leaf, with a mashed sweet potato, avocado, and a rice instead ... the delicious taste of the Bits of Cauliflower Eva® that give a twist to this recipe. Test it!

Ingredients

4 portions
  • water
  • salt
  • 8 leaves chard, without stem
  • 2 cups Cauliflower Eva® Bits
  • 1 sweet potato, cooked and peeled
  • 2 tablespoons margarine
  • 1/2 teaspoons salt
  • 1/4 teaspoons nutmeg
  • 1/8 red onions, cut in pen
  • 2 avocados, in slices
  • 1/2 cups mayonnaise, for the dressing
  • 1 tablespoon sesame oil, for the dressing
  • 3 tablespoons Sriracha sauce, for the dressing
  • 1/4 teaspoons salt, for the dressing

Preparation

Heat the water in a pot until it breaks the boil. Add the salt and cook the chard leaves for a minute. Remove and place in a bowl of cold water. Drain
In the same pot, cook the Cauliflower Eva® Bits for 5 minutes. Place in cold water and drain. Reservation.
For the purée, process the sweet potato in a food processor with the margarine. Season with salt and a little nutmeg.
Arrange the tacos, put some puree on the chard leaves, add Cauliflower Eva® Bits, purple onions and avocado. Close the tacos.
For the dressing, mix the mayonnaise with the oil, the sriracha and a little salt. Serve the tacos with the dressing.

PRESENTATION

Accompany with a creamy dressing.

TIPS

It is important to cook the chard, so that it is more flexible and does not taste so bitter.
