Ingredients

4 servings
  • enough of Water
  • enough of Salt
  • 8 leaves of chard without stem
  • 2 cups of Cauliflower Eva® Bits
  • 1 piece of sweet potato cooked and peeled
  • 2 spoonfuls of margarine
  • 1/2 teaspoonful of Salt
  • 1/4 of teaspoonful of nutmeg
  • 1/8 of piece of red onion cut in pen
  • 2 pieces of avocado in slices
  • 1/2 Cup of Mayonnaise for the dressing
  • 1 tablespoon of sesame oil for the dressing
  • 3 spoonfuls of Sriracha sauce for the dressing
  • 1/4 of teaspoonful of Salt for the dressing

    Preparation

    Heat the water in a pot until it breaks the boil. Add the salt and cook the chard leaves for a minute. Remove and place in a bowl of cold water. Drain
    In the same pot, cook the Cauliflower Eva® Bits for 5 minutes. Place in cold water and drain. Reservation.
    For the purée, process the sweet potato in a food processor with the margarine. Season with salt and a little nutmeg.
    Arrange the tacos, put some puree on the chard leaves, add Cauliflower Eva® Bits, purple onions and avocado. Close the tacos.
    For the dressing, mix the mayonnaise with the oil, the sriracha and a little salt. Serve the tacos with the dressing.

    PRESENTATION

    Accompany with a creamy dressing.

    TIPS

    It is important to cook the chard, so that it is more flexible and does not taste so bitter.
