Vegetarian Tostadas with Hummus Dressing

Ingredients

4 servings
  • 2 spoonfuls of vegetable oil
  • 2 spoonfuls of onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 2 cups of mushroom filleted
  • 1 eggplant cut into squares
  • 1/2 Cup of whole corn kernels
  • 1 Cup of zucchini cut into squares
  • 1 tablespoon of epazote finely chopped
  • 280 grams of Chipotle Hummus and Cilantro Libanius®
  • 2 spoonfuls of chipotle chile pepper
  • 1 package of Nopal Toasts Señor Cactus de Chía®
  • 1 teaspoonful of onion powder
  • to taste of salt and pepper

Preparation

In a pan over medium heat heat the oil add the onion, garlic, mushrooms, eggplant, corn kernels, zucchini, cook for 3 minutes.
Add the epazote and let cook for 3 more minutes.
Spread cactus toast Lord Cactus® with the previous dressing and add the vegetables, enjoy.

PRESENTATION

On an extended plate, accompanied by a lemonade.

TIPS

You can replace the epazote with fresh parsley.
