Ingredients

6 portions
  • 2 tablespoons olive oil
  • 1/2 cups onion, filleted
  • 1 tablespoon garlic, finely chopped
  • 1 cup tomtato, finely chopped
  • 1 cup corn, white, peeled
  • 4 Castilla pumpkin, Italian, cut into slices
  • 1 cup mashed tomatoes
  • 1 tablespoon oregano
  • 1 tablespoon thyme
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 cup cherry tomato
  • 1 cup Oaxaca cheese, shredded

Preparation

Preheat the oven to 200 ° C (370°F approx.)
Heat a pan with olive oil over medium heat and cook the onion and garlic. Add the tomato, corn and squash, cook 3 minutes and add the tomato puree, spices and season to your liking.
Place the previous preparation in fireproof dish. Arrange the cherry tomatoes and cover with the Oaxaca shredded cheese. Bake for 15 minutes, covering with aluminum foil until the cheese melts. Serve hot.

PRESENTATION

Serve the zucchini in a bowl of Oaxaca cheese and the cherry jitomatitos to gratin.
