  • 1/4 cups olive oil
  • 1 tablespoon oregano
  • 1 avocado, cut into slices, reserve some to decorate
  • 2 tablespoons lemon juice
  • 1 pinch salt
  • 1 pinch black pepper
  • 3 pumpkins, Italian zucchini

  • enough fresh coriander


For the shredded meat or salpicón, in a bowl mix the skirt beef with the purple onion, the tomato, the radish, the fresh cheese, the chilies in vinegar, the apple cider vinegar, the olive oil, the oregano, the avocado and season to taste with salt and pepper. Set aside.
