Preparation
For the sauce, heat the olive oil in a deep pan over medium heat and cook the onion and garlic until they are transparent. Add the tomatoes and chile poblano, cook 5 minutes and add the corn, season.
Blend the previous preparation together with chicken broth, milk and cilantro until a homogeneous sauce is obtained.
Return the sauce to a medium heat and cook until thick, add the Eva® zucchini noodles and cook until softened. Season to your liking
Serve the noodles in bowls and decorate with fresh cheese in cubes, roasted corn kernels and fresh cilantro.
