If you are a pasta lover, but you are looking for a low carb option, we made this version of spaghetti L poblana but now with zucchini noodles. With a creamy poblano chile sauce and decorated with corn and fresh cheese. You cannot believe how delicious it is!

Ingredients

4 servings
  • 1 tablespoon of olive oil
  • 1/4 of piece of onion chopped
  • 1 clove of garlic
  • 2 pieces of tomato in quarters
  • 2 cups of Poblano pepper Strips (Rajas)
  • 1/2 Cup of corn kernels
  • 3/4 of Cup of chicken soup
  • 1/4 of Cup of skim milk
  • 2 spoonfuls of coriander
  • 2 packages of Noodles by Zucchini Eva® 300 gc / u
  • to taste of salt and pepper
  • 1/2 Cup of corn kernels roasted to decorate
  • 1/2 Cup of fresh cheese in cubes to decorate
  • to taste of coriander fresh, for decoration

    Preparation

    For the sauce, heat the olive oil in a deep pan over medium heat and cook the onion and garlic until they are transparent. Add the tomatoes and chile poblano, cook 5 minutes and add the corn, season.
    Blend the previous preparation together with chicken broth, milk and cilantro until a homogeneous sauce is obtained.
    Return the sauce to a medium heat and cook until thick, add the Eva® zucchini noodles and cook until softened. Season to your liking
    Serve the noodles in bowls and decorate with fresh cheese in cubes, roasted corn kernels and fresh cilantro.

    PRESENTATION

    Serve with the sauce and decorate with roasted corn and fresh cheese.

    TIPS

    Cook the zucchini noodles with the sauce for a short time so they do not get watery, as they tend to release a lot of water.
