This Bacon Wrapped Meatloaf Bundt is an economic recipe, that is very satisfying and very original. This recipe with meat is wrapped in bacon and stuffed with boiled eggs, so we recommend to add a little vinegar so the eggs don't break. In addition, during cooking, the meat will release a lot of juice, so we recommend you drain enough before removing from the pan, and with that juice you can make a delicious gravy.

Ingredients

12 portions
  • enough Water
  • 5 San Juan® Eggs
  • 1 tablespoon white vinegar
  • 500 grams ground beef, - beef
  • 500 grams ground beef, - pork
  • 1/2 cups onion, finely chopped
  • 1/2 cups pea
  • 1/2 cups corn grain
  • 1/2 cups carrot, cut in cubes
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon mustard
  • 1/2 cups bbq sauce
  • 2 tablespoons parsley, finely chopped
  • enough salt and pepper
  • 20 slices bacon
  • enough bbq sauce, to varnish
  • enough cherry tomato, to decorate
  • enough chinese parsley, to decorate

Preparation

Preheat the oven to 180°C. ( 356°F)
Place the pieces of San Juan Egg in a pot, add water only to cover, add vinegar and cook over medium heat. Bring to a boil and cook for 10 minutes. Remove from the heat and cool the pieces under a stream of cold water.
Peel the pieces of San Juan® Egg and set aside.
In a bowl, mix the beef with pork, onion, peas, corn kernels, carrot, garlic, mustard, bbq sauce, parsley, season with salt and pepper.
In a bundt pan place the bacon strips until the pan is covered, add half the meat, with a spoon, make a groove and place the pieces of San Juan® Egg. Cover the top layer with the rest of the meat, cover with aluminum foil and bake for 40 minutes.
Remove meatloaf from the bundt pan on a tray, taking care to drain the juices from the meat. Varnish the bacon with the bbq sauce and return to the oven for another 20 minutes or until the bacon is golden brown.
Place the meatloaf bundt on a platter, decorate with cherry tomatoes and parsley.

PRESENTATION

Place the meatloaf bundt on a platter and decorate with cherry tomato and parsley. Serve with a salad.

TIPS

It is important to add the vinegar to the San Juan® egg pieces so that they don't break. During cooking, the meat will release many juices, drain it before removing from the pan. You can use those juices to make a gravy.
